Glenlaurel Inn Famous Scones

The beloved breakfast pastry served every morning at Glenlaurel Inn. Try it with a dab of orange marmalade or strawberry jam.

  • 2 cups all-purpose flour
  • 1 Tablespoon baking powder
  • ½ teaspoon salt
  • 2 Tablespoon sugar
  • 6 Tablespoons unsalted butter, cold, cut into cubes
  • 1 cup filling (ex. fresh blueberries, dried cherries, lemon zest, cinnamon & dried apple)
  • 1 cup heavy cream, plus some for brushing the scones
  • 8 Tablespoons raw sugar to sprinkle on top

Preheat the oven 400 degrees. Sift dry ingredients: flour, baking powder, salt, sugar. Using pastry blender or forks, cut the butter into the dry ingredients to resemble coarse crumbs. Make a well in the center of your mixture and pour in the heavy cream. Fold in your ingredients to flavor. Note if you are flavoring with citrus zest or cinnamon, add prior to adding heavy cream. Mix just to incorporate.

Press dough out on a lightly floured surface. Cut into desired shape. Brush heavy cream on top and sprinkle with raw sugar. Bake at 400 degrees for 15- 20 minutes, until light golden brown. Makes approximately 8 scones.
