Asparagus and Ham Strata

A delicious taste of spring with fresh asparagus combined with ham and cheese make this breakfast a welcome eye-opener. The guests love it.

  • 5 cups of shredded hash browns
  • 1 1/2 c. shredded cheddar cheese
  • 2 cups diced cooked ham
  • 1/2 c. sliced green onions
  • 1/2 to 1 lb. asparagus spears
  • 1 cup grape tomatoes halved or quartered
  • 8 large beaten eggs
  • 1 1/2 cups half and half
  • 1/4 t. salt
  • 1/4 t. pepper

Grease a 9 x 13 baking dish. Brown the hash brown potatoes in a skillet and arrange evenly in the bottom of the dish. In the skillet saute onions, asparagus spears and tomatoes lightly.

Sprinkle vegetables over the potatoes then add the ham and sprinkle with cheese.

In a large mixing bowl, combine eggs, milk, salt and pepper. Pour egg mixture over potato mixture in dish. Bake at 350 for 45-55 minutes. (This dish can be covered and refrigerated overnight.)
