Nature is so much a part of what we are and it is reflected in our rooms. Every room has a patio or balcony opening directly onto the gardens or courtyard, or with views over the valley and meadows. Flowers abound everywhere overflowing boxes that line the balconies, vines that bloom alongside of patio doors and pots overflowing along the outdoor areas. Our rooms all feature private baths complete with amazing shea butter soaps, and plush robes. DirecTv with a huge variety of sports and news options allows you to keep up even while traveling. Flatscreens are discretely tucked away in built in hand crafted desks, some with DVD players. Free WiFi throughout the inn makes checking the web effortless.   Every room features either a patio or balcony, both lending to your outdoor experience. The south facing rooms border on extravagant gardens and are just a short walk to the water garden. The north rooms look out onto the courtyard and woodland, peaceful and serene. Jack in the pulpits, ferns and rhododendrons fill this area and are just stunning in the spring. The balconies overlook both the woods and the garden and are the perfect place to hide out and have that first morning cup of coffee while the sun rises from the east.

Queen beds are clothed in super soft linens, fluffy down comforters and wonderful pillows. Like sleeping under and cloud. High quality  mattresses assure you a restful nights sleep.

Brown Butter Glaze

How can you go wrong with brown butter? The PA Dutch use it on noodles, serve it drizzled over mashed potatoes, mix it with veggies... You name it, brown butter has a place almost everywhere. You can well imagine that mixing it with powdered sugar would be an amazing use for it as well! This is the frosting that goes with the Cranberry cookies. Don't skimp. This make them the fabulous treat that they are.

Chocolate Espresso Cake with Peanut Butter Frosting

This is a huge favorite and a combination that goes way back. Chocolate and Peanut Butter cakes were a favorite of my grandmother, Emma Weaver. For her 90th birthday this was the cake she requested. This is a very moist version with some wonderful depth of flavor. The Espresso or dark coffee gives it a rich flavor complimented by flavorful creamy peanut butter. Easy as easy gets. Bake this one up and enjoy.

Cranberry Cookies with Brown Butter Glaze

These cookies have been a favorite here for a long time. I have never given out the recipe hoping at some point to figure out how to make them in large quantities. I have lost count of the number of times I have been asked for the recipe and now, this Christmas, I am posting it as a gift to my friends and guests. I hope that you have as much success and enjoyment from these cookies as we have had. They are truly incredible and they freeze beautifully. My children would tell you that they taste just amazing straight from the freezer.

Peanut Butter Icing

This is just an amazing icing for all things.. from cookies to cakes. Sprinkle with chopped peanuts to pull out the flavor. Drizzle with melted chocolate for a great look when using with the Chocolate Espresso Cake.

One of the favorite cookies at the Swiss Woods Inn, this is a recipe from my mother.. from her mother. It is a PA Dutch essential. Make sure you do not overbake these. They need to come out of the oven just before you think they are finished to keep their wonderful soft and chewy texture.

Swiss Carrot Cake Waffles with Roasted Pineapple

"Guests won't waffle on how yummy this breakfast dish is! Aargauer Ruebli Torte is the Swiss patisserie known as one of the best and an all-time favorite, Argau being the area of Switzerland that is home of this carrot cake. Not overly sweet but rather loaded with healthy nutrients, these waffles embody all the good things this cake has to offer, carrots, almonds, lemon, eggs. Pair with the not-overly-sweet mascarpone (with a little lemon kick) and the oh-so-good roasted pineapple, and you have a breakfast guests will rave about for years! Oh so fitting for a morning at Swiss Woods. Life is short -- start your day with dessert!"
