Ingredients

1 C. corn meal 1 t. salt 1 T. sugar 1 C. boiling water 1 egg 1/2 C. milk 2 T. melted butter 1/2 C. flour - sifted 2 t. baking powder

Directions
|
Combine corn meal, salt and sugar in a bowl and stir in boiling water. Cover and let stand for 10-20 minutes. Stir in egg, milk and melted butter to corn meal mixture after it has "rested". Sift flour and baking powder together and stir sifted ingredients into batter with a few, swift strokes. Cook on a hot, greased griddle.
