PUFF PASTRY CUPS  

Ingredients
 
Filling:
1/2 package of frozen spinach
1 small onion, chopped & sautéed in 2 Tbsp. Butter
2 jars marinated artichoke hearts, drained & chopped

Custard
8 eggs
1/2 cup half & half
1 cup or more shredded cheddar cheese
1/2 package frozen puff pastry sheets thawed and cut into 6 squares
 

Directions
 

Roll puff pastry to make about a 5 inch square. Press into custard cups (large - 3/4 cup). Layer in cheese, filling and custard. Distribute evenly. Bake at 400 degrees on a cookie sheet until brown.
