LEMON BERRY TART  

Ingredients
 
1 9" prepared pie crust
Zest from 2 lemons
1/2 cup sugar
1 tablespoon flour
1 cup heavy cream
2 tablespoons sour cream
1 tablespoon unsalted butter, shaved into small pieces
1 pint raspberries, blackberries or blueberries
 

Directions
 

1. Preheat the oven to 350ยบ. Prebake a plain pie crust for 15 minutes.

2. Zest the lemons (white pith will make it better)

3. In a mixing bowl, combine the sugar, flour, cream and sour cream. Pour into the crust and dot with butter. Scatter the zest over the cream and place on baking sheet. Bake for 50 minutes. Remove from the oven and allow to cool completely before topping with berries in concentric circles. Place one mint leaf in the center.
