Ingredients

4 eggs
3/4 cup heavy cream
salt and pepper
3 1/2 cups of cheese, We always use crumbled feta, shredded parmesan, grated
gruyere.
About 1/3 of each cheese to equal 3 1/2 cups of cheese total.
1/3 cup fresh tomatoes, sliced
1/3 cup fresh mushrooms, sliced
1 homemade or ready made pie crust (we cheat and use a really
good, ready made)

Directions

Place tomatoes and mushrooms in the bottom of pie crust
and add fresh cracked black pepper and dash of salt. Then layer cheeses. Mix
in separate bowl 4 eggs and 3/4 cups of heavy cream, add more fresh pepper
and dash of salt.
Slowly pour egg and cream mixture over pie.
Bake at 350 for one hour.
Sprinkle extra parmesan on top.
