The hallmark of Villa Marco Polo’s cuisine is our use of locally grown organic ingredients, including heirloom tomatoes from Sun Wing Farms, greens from Coteau Farms, fresh laid eggs from Kasani Farm’s hens in Metchosin, seasonal fruits and vegetables from various Saanich Peninsula organic farms, and sausages hand made by Choux Choux Charcuterie.
Villa Marco Polo’s organic Fair Trade coffee is grown by South American small-scale farmers who use sustainable environmental practices. After harvesting, the coffee beans are transported to Victoria’s Level Ground Trading, where they are air-roasted in small batches, and distributed in reusable EnviroTotes.
