COMBINE DATES, WATER AND BAKING SODA IN SMALL MIXING BOWL; SET ASIDE. GREASE
AND FLOUR (OR SPRAY WITH PAM) A 9X5 LOAF PAN. PREHEAT OVEN TO 350 F. IN A FOOD PROCESSOR WITH THE KNIFE BLADE, PLACE ORANGE PIECES (INCLUDING SKIN)
AND PROCESS TO CHOP. ADD FLOUR, SUGAR, EGGS, BUTTER, SALT AND HALF THE DATE
MIXTURE. PROCESS JUST UNTIL WELL MIXED, ABOUT 5 SECONDS. ADD REMAINING DATE
MIXTURE AND NUTS. PROCESS UNTIL WELL MIXED, NO MORE THAN 15 SECONDS. (YOU DON'T
WANT EVERYTHING CHOPPED TOO FINELY.) POUR INTO LOAF PAN AND BAKE 55 TO 65 MINUTES,
UNTIL IT LOAF SPRINGS BACK WHEN TOUCHED LIGHTLY IN THE CENTER. COOL FOR 10
MINUTES. LOOSEN SIDES WITH A SPATULA AND REMOVE FROM PAN.
