'THERE IS NOTHING BETTER THAN THE WONDERFUL AROMA'S OF HOMEMADE BAKING. THESE SWEET TREATS ARE SURE TO GET YOUR TASTE BUDS DANCING.' Fresh Farmhouse Plum Kuchen This wonderful homemade tart can be substituted with cherries, peaches or other desired fruit which is in season. Its simplicity will make you want to use it again and again. A ‘Durlacher Hof’ summer time favourite, served with yoghurt in place of whipped cream. Pastry: 2 cups plus 2 tablespoons of all-purpose flour 3/4 cup butter, cut in small pieces 1/2cup sugar 1 egg Filling: 2 lbs. prune plums or cherries 1 teaspoon fresh grated lemon peel 1 teaspoon cinnamon 6 tablespoons sugar Whipped cream or yoghurt, if desired To make pastry, sift flour into a large bowl. Using a pastry blender or 2 knives, cut in butter until evenly distributed and mixture resembles breadcrumbs. With a fork, lightly mix in sugar and egg to make a dough. Press dough in the bottom and 1 inch up the sides of a buttered 9-inch spring form pan or tart pan with removable bottom. To make filling, wash and halve plums or cherries; remove pits. Add cinnamon, lemon juice and sugar. Preheat oven to 400F degrees (205C). Pierce sides and bottom of pastry shell all over with a fork. Arrange plums in a rosette pattern skin side up and slightly overlapping, to fill pastry shell. Bake 30-35 minutes. Cool slightly in tin. Remove from tin and sprinkle with sugar. Serve with whipped cream if desired.
