KAISERSCHMARREN Austrian pancake Legend has it that Emperor Franz Joseph always tore his pancakes into small bits before eating them, so his chef began serving them that way.  

Ingredients
 
2 cups all-purpose flour 1 cup milk 1/3 cup unsalted butter 4 eggs, separated at room temperature 1/4 cup granulated sugar 1/2 cup raisins icing sugar, as needed stewed plums or other fruit  

Directions
 
In a large mixing bowl, stir together flour and milk. Melt 1/4 cup of the butter, whisk in egg yolks. In a separate bowl, beat egg whites with sugar until very stiff. Fold into batter. Melt remaining butter in 12” round cast-iron skillet. Pour in batter; scatter with raisins. Bake in preheated 375’ F oven for 20 minutes or until puffy and golden. Tear apart with two forks. Let stand for 3-4 minutes before dusting with icing sugar and serving with stewed fruit, prune, plums or cherries. Serve in cast iron frying pans for rustic appeal. Checkered tablecloth and wooden boards with pottery compote dishes.
