About Our Executive Chef, Amy Howell A native of New York, Executive Chef Amy Howell finds inspiration from chefs such as Julia Child, Todd English, Donna Hay and Michael Mischan. Also a certified personal trainer, Chef Amy feels strongly about creating extraordinary dishes, which incorporate health, wellness, nutrition and especially, taste. Challenging preconceived notions that healthy food is not tasty food, Chef Amy creates sublime dishes that tantalize the taste buds and awaken the soul. Inspired by the local fare, she uses only the freshest ingredients to work her own brand of magic. Her eye towards health-conscious cooking prefers saucing dishes with vegetable juiced-based vinaigrettes, light emulsified stocks, and purees as well as delicate broths and herb-infused meat and fish essences. “When guests leave the Bistro I want them to feel stimulated and alert, rather than heavy from over indulging in excess cream and butter.
