Ingredients:
3 medium Granny Smith apples
1 small to medium red onion
1 medium red bell pepper
1 Jalapeno pepper, minced
1/3 cup dried currants
2 tablespoons fresh cilantro, finely chopped
2 teaspoons grated orange zest
¾ cup fresh orange juice
2 tablespoons Dijon mustard
1 tablespoon ground cumin
½ cup vegetable oil
1 tablespoon dark sesame oil

Directions

Method:
Dice apples, onion, bell pepper into ¼" pieces and combine with currants, minced Jalapeno, chopped cilantro and grated orange zest.
Dressing:
In blender combine orange juice, Dijon mustard and cumin. Process until smooth and gradually add oils in a thin stream until thickened. Toss with apple mixture and refrigerate at least 2-4 hours in order that flavors
blend. Serve with tortilla chips.
