Ingredients (for 4-6)
4 oz white bread, crusts removed
1 pint light cream
2 oz unsalted butter
3 eggs, separated
grated rind of a lemon
5 oz powder sugar
4 rounded tablespoons apricot or strawberry jam

Cut the bread into 1/2 in. cubes and put them in a lightly buttered baking dish. Heat the milk and butter until just warm, add to the beaten egg yolks, the lemon rind and 3 oz of the sugar. Pour this custard over the bread. Bake the pudding in the center of a pre-heated oven, at 350ºF for about 20 minutes or until set. Remove from the oven and spread the jam over the pudding.
Whisk the egg whites until stiff, and fold in the remaining sugar. Pile this meringue over the jam, and return the pudding to the oven for another 10 minutes or until the top is crisp.
