Ingredients (for 10-12)
1 tbsp unflavored gelatin
3 tbsp cold water
1-3 tsp maple extract (to taste)
1 cup Massachusetts maple syrup
3 organic eggs
1 cup whipping cream, chilled

Sprinkle gelatin over water, and let stand until softened. Heat maple syrup in heavy saucepan; add softened gelatin; stir until gelatin dissolves; remove from heat; stir in maple extract. Let stand at room temperature until warm.
Separate eggs. With electric beater, beat eggs yolks until light. By hand, very gradually stir warm gelatin/syrup mixture into beaten yolks; refrigerate mixture until it is quite thick. Beat egg whites until firm peaks form; set aside. Whip cream until firm peaks form. Using a wire whisk, carefully fold whipped cream into thickening gelatin mixture; then fold in beaten egg whites.
Pour mousse into suitable container(s). Refrigerate until set (overnight, or for several hours depending on the size of containers).
