Chef Elaine Lemm, affectionately called "Lemmy" by her students, has com to the United States to establish as American extension of her successful Cuisine Eclairée Ecole de Cuisine that operates in Europe. The attractive graceful chef is more comfortable with the title "teacher" than chef. Her tilting Yorkshire accent guides her students through the intricacies of the techniques and preparation of classical French cuisine in such a way that it is fast paced, educational and above all fun.
She firmly believes that the techniques she teaches are like a map to guide the students, no matter which style of cuisine they may chose to prepare. From this premise she has created a range of courses designed to inspire the novice and challenge the proficient cook.
Cynthia Reeves, co-director of Cuisine! Cuisine! combines her thirty year love affair with New Orleans with her interest in history, architecture, fine dining and hospitality to create for the students a perfect atmosphere to learn and explore the unique flavour of the "the city that care forgot." While running her own public relations firm, she decided to open her circa 1798 West Indies style plantation to guests. Her efforts at creating a luxuriously comfortable atmosphere have made the House on Bayou Road Inn on eof the most premier small inns in New Orleans.

Grand Class An intensive 5 day course exploring the techniques and preparation of french cookery whilst allowing the students to sample the delights of New Orleans. Visit some of the top restaurants of the city for demonstrations by leading chefs followed by dinner, cocktails, wine tastings, and outings will combine to give the students an exceptional experience of learning, creating and fun.

Mini Class A two day course working through the planning and preparation of a menu culminating in a dinner allowing the students to enjoy the results of their work. A combination of demonstrations and practical application of techniques is used to create an enjoyable evening of good food, wine and a great sense of accomplishment.
