Oat & Jam Muffins  

Ingredients
 
1 C. oatmeal (1 minute kind, not instant)
1 C. buttermilk
1 egg
½ C. melted margarine
½ C. brown sugar
½ tsp. salt
2 tsp. baking powder
1 C. flour
1 tsp. Soda
 

Directions
 
Combine oatmeal and buttermilk and let stand 2 minutes. Add & stir egg and melted margarine. In separate bowl place remiaing dry ingredients. Blend dry into wet and place into greased muffin tins. Place scant teaspoon of jam on top of each muffin DO NOT POKE into batter. Bake 15 minutes at 350.
