Grease and flour 4 loaf pans. Beat the diced apples, sugar, vegetable oil, eggs and vanilla with electric mixer until mixed & fluffy. Sift together flour, cinnamon, salt, baking soda, cloves, ginger and baking powder in separate bowl. Now add wet mixture to dry mixture with raisins & stir until moist. Bake 1 hour at 350. Test with cake tester in center. Should be clean. If not, bake 10 minutes more & retest. Freezes well - can microwave to reheat & serve.
