6 C. diced apples 5 C. sugar 2 1/2 C. vegetable oil 8 eggs 2 tbl. vanilla 6 C. flour 4 tsp. cinnamon 3 tsp. salt 3 tsp. baking soda 2 tsp. cloves 1 tsp. ginger 1 tsp. baking powder 2/3 cup raisins

Grease and flour 4 loaf pans. Beat the diced apples, sugar, vegetable oil, eggs and vanilla with electric mixer until mixed & fluffy. Sift together flour, cinnamon, salt, baking soda, cloves, ginger and baking powder in separate bowl. Now add wet mixture to dry mixture with raisins & stir until moist. Bake 1 hour at 350. Test with cake tester in center. Should be clean. If not, bake 10 minutes more & retest. Freezes well - can microwave to reheat & serve.
