Zucchini Bread  

Ingredients
 
6 eggs
5 C. sugar
2 tsp. vanilla
4 C. finely chopped zucchini (unpeeled)
6 c. flour
6 tsp. cinnamon
1 tsp. salt
2 tsp. soda
3 tsp. baking powder
1 C. raisins
 

Directions
 
Grease & flour 4 loaf pans. Beat eggs until lemon colored. Add sugar and beat until well mixed in. Then add vanilla and zucchini. Sift together flour, cinnamon, salt, soda and baking powder in very large bowl. Stir dry into wet until moist and fold in raisins. Bake 1 hour at 350. Test with cake tester in center. Should be clean. If not, bake 10 minutes more & retest. Freezes well - can microwave to reheat & serve.
