Pineapple Nut Upside-Down Muffins  

Ingredients
 
1/4 cup packed brown sugar
2 tablespoons melted butter (or margarine)
12 whole walnuts
1 1/2 cups 40% Bran Flakes
1 8-ounce can of crushed pineapple with juice
1/4 cup milk
1 egg
1/4 cup vegetable oil
1/2 cup chopped nuts
1 1/4 cups flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1/3 cup sugar
 

Directions
 
Preheat the oven to 375 degrees. Grease 12 muffin tins. Combine the brown sugar, melted butter (or margarine) and walnuts. Place scant teaspoon of mixture in bottom of muffin tines. Place a half walnut in each. In a large mixing bowl, place the Bran Flakes, crushed pineapple with juice and milk. Let stand for two (2) minutes. Add egg, cup vegetable oil and chopped nuts and stir vigorously to above mixture. In a separate bowl, sift together flour, baking powder, salt and sugar. Pour dry ingredients into wet and stir until just blended. Batter will be thick. Portion evenly into muffin tins. Bake 20 minutes at 375 degrees. When removing from the oven, turn upside down immediately onto serving plate.
