Mix the water and sugar together in a small saucepan. Over medium heat, stir the mixture until the sugar dissolves. Cool. Combine Pinot Noir, Lemon Juice and Sugar/Water in a shallow pan. Place the mixture in the freezer for thirty minutes. Remove from the freezer and break the mixture up with a fork. Place back in the freezer, and repeat this process every thirty minutes for 2-3 hours, or until the granita is frozen. The consistency should be that of shaved ice. Portion with a small ice cream scoop and serve as an intermezzo in either a frozen cordial glass or on a frozen lemon crown.
