Baked Butter Apples with Granola and Cream  

Ingredients
 
4 large Granny Smith apples, unpeeled
Cinnamon and Sugar mixture
2 cups granola
1/4 cup butter (1/2 stick)
1 cup whipping cream
3 tablespoons sugar
1 teaspoon vanilla extract
nutmeg
 

Directions
 
Preheat the oven to 350 degrees. Halve and core the apples. Place the apples in a shallow baking dish that has been coated with a nonstick cooking spray. Sprinkle generously with the cinnamon/sugar mixture. Then evenly sprinkle the granola on top of the apples, with some falling on the apples and over the sides. Place a pat of butter atop each apple. Bake for 45 minutes to 1 hour or until tender when pierced with a fork (but not mushy).

Meanwhile, whip the cream with the sugar and vanilla. Serve the apples warm with a large dollop of whipped cream. Sprinkle with grated nutmeg as garnish.
