Preheat oven 350o.
Line cookie sheets with parchment paper. Brush with 2 Tbs clarified butter.
In a bowl combine sugar, egg whites, flour and butter. Mix thoroughly.
Drop by the tablespoon onto the cookie sheet. Using your finger, spread in
very thin circles. Sprinkle with pistachios. Bake 10-12 minutes or until light
golden color. To shape, cool slightly and remove quickly and place over a rolling
pin until firm and thoroughly cool.
