Ingredients

2 ½ cups all-purpose flour
½ cup sugar
2/3 cup butter
1/4 teaspoon baking soda
1/4 teaspoon salt
2 Tablespoons milk
1 egg
1 teaspoon almond extract
1 teaspoon vanilla extract
16 ounces of your favorite jam

Directions

Preheat Oven to 350* F.
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Add the egg, almond and vanilla extracts and milk. Mix until thoroughly combined.
In a small bowl, mix together the flour, baking soda, and salt.
Add the dry ingredients to the wet ingredients and mix completely.
Place the dough onto a lightly floured surface and roll out to 1/8 inch thick.
Cut the dough into 36 pieces with a fluted round cookie cutter about 2 inches
across. Place one of the cookie rounds onto a parchment-lined cookie sheet and
place a small amount of jam on top.
Cut out the center of a second round with small cookie cutter of any desired
shape and reserve. Place the second round atop the jam. Crimp slightly around
the edges to prevent the jam from escaping between the layers while the cookies
are baking Place the reserved cut-out offset on top of the cookie for a nice
decorative touch.
Repeat with the rest of the dough, placing each finished cookie about 2 inches
apart on the baking sheet.
Bake 10 to 12 minutes or until light golden brown.
