In 1896, a tradition of fine dining was established in Fish Creek, and it continues to grow today at the landmark White Gull Inn, Door County's most famous and historic inn. That year, German-born Dr. Herman Welcker from Milwaukee fell in love with the town while on vacation in Door County. He purchased land, moved his family from the city, and built what is now the White Gull Inn. Welcker's guests were treated to a regimen of vigorous exercise, rest and three hearty homecooked meals a day.

Generations of cooks, innkeepers and guests have come and gone since the Welckers' days, but fine dining has remained a tradition. Under current innkeepers Andy and Jan Coulson, the White Gull has built an award-winning reputation for breakfasts, lunches, candlelight dinners, and traditional Door County fish boils.

Along with compliments and national recognition have come requests for recipes, both from newspaper and magazine editors and from the ever-growing number of guests who make the White Gull a regular stop on their Door County visits. In 1990, the inn published its first cookbook, Favorite Recipes From Our Kitchen - The White Gull Inn.

However, the talented chefs at the White Gull never stop creating, and the ink had barely dried on the cookbook when there were many more recipes - and requests; hence the creation of a Centennial Cookbook: More Favorite Recipes from Our Kitchen. The innovative and easily comprehensible recipes showcase local ingredients, bringing alive the flavors and magic of Door County and the more than 100-year-old tradition of the White Gull Inn.
