Mango, Pepper, and Pomegranate Salad  

Ingredients
 
1 large mango, peeled and cut into 1/2 inch cubes. 2 green onions, white and green parts, chopped. 1/2 red onion, thinly sliced. 1/2 yellow bell pepper, thinly sliced. 1/3 jalapeno chile, seeded and chopped. 1/4 cup pomegranate seeds. 1 tablespoon chopped fresh cilantro leaves. 2 tablespoons freshly squeezed orange juice. 2 tablespoons olive oil.  

Directions
 
Combine the mango, green onions, red onion, bell peppers, chile, pomegranate seeds, and cilantro in a bowl. Whisk together the orange juice and olive oil in a small bowl and pour over the mango mixture. Cover and refrigerate until ready to use.

Serves 4
