Best Split Pea  

Ingredients
 

Simmer
3 cups green split peas
5 cups water
1 bay leaf
2 teaspoons salt

Saute
1 cup minced onion
3 cloves crushed garlic
1 cup minced celery
1 small thinly sliced potato
2 cups sliced carrots

Last
1/4 cup dry red wine
1/4 teaspoon dry mustard
1/4 teaspoon thyme
3 tablespoons vinegar
1 cup chopped tomato
1/4 cup chopped parsley

 

Directions
 

Simmer
Simmer uncovered, 3-4 hours. Remove bay leaf.

Saute
Saute in 2 tablespoons of oil. Combine all above ingredients and puree.

Last
Add about 15 minutes before serving.
