saute onions in oil until soft, add brown sugar and brown. Add vinegar. Place onions into an ovenproof dish.
Brown chicken breasts in skillet. Place on onions and top with apple rings and cheddar and place in oven at 350 degrees. Bake 25-30 minutes.
In small sauce pan, bring cider and maple syrup to a boil, thicken with blended cornstarch and water. When chicken comes from oven, glaze chicken with cider mixture.
