Ingredients

2 ½ pounds sweet potatoes, baked in a 350degree oven until very soft,
and then cooled
¼ cup bourbon
½ to ¾ cup light brown sugar
½ cup unsalted butter, softened
½ cup sorghum molasses
½ to ¾ heavy cream
salt and pepper to taste

Directions

Scoop pulp out of sweet potatoes. Discard skins. Push pulp through a food mill.
Over medium heat, reheat sweet potatoes, adding bourbon and butter first, followed
by molasses. Stir well. Add in brown sugar to taste. Adjust consistency with
heavy cream, and then season with salt and pepper. Serve while hot.
