Sautéed Winter Greens with Shallots  

Ingredients
 
3 pounds assorted winter greens such as spinach, kale, and swiss chard
1 tablespoon shallots, minced
2 tablespoons olive oil
1 oz. chicken stock
1 tablespoon whole unsalted butter
kosher salt, to taste
freshly ground black pepper, to taste
 

Directions
 

1. In a large stockpot, heat olive oil over medium-high heat. Add shallots, give a quick stir, then add greens and stir to combine. Add chicken stock, whole butter and season lightly with salt and pepper. Cover with tight fitting lid.

2. Check after two minutes. Stir greens to make sure all has wilted. Check seasoning. Adjust if necessary. Serve immediately.
