Start with high-quality loose-leaf tea or teabags.
Fill an empty kettle with cold water and heat. Bring the kettle to a rolling
boil, but don't over-boil, as that strips the water of oxygen and can result
in a bitter brew.
Pour out the hot water in the teapot and add one heaping teaspoon of tea leaves
(or one teabag) per person and one for the pot. Pour the boiling water over
the tea. Brew for approximately five minutes, or until desired strength. Stir
the tea and pour into cups using a strainer to catch the leaves (or remove teabags).
