Ingredients
|
4 cups blanched fava beans
4 cups baby corn - diced in 1/2 inch pieces
1 medium onion - diced small
1 red pepper - diced small
1 Tbsp garlic - minced
1/4 lb butter
1-1/2 Tbsp salt
1/2 Tbsp white pepper
2 cups chicken stock
1 cup heavy cream

Directions

Saute onion, garlic & red pepper in butter
Add baby corn pieces
Season with salt & white pepper
Add chicken stock, bring to boil, then simmer for 10 minutes
Add heavy cream, bring to boil, then simmer for 10 minutes
Add fava beans, remove from heat and serve.
