The Filling: 5 eggs 1 cup sugar 5 Tbls lemon juice 1 egg yolk 2/3 cups heavy cream 1 Tsp lemon extract
The Crust: Mix sugar and butter. Add the rest of the ingredients and mix until incorporated. Roll out 1/4 inch thick and put in a 9" tart pan.
The Filling: Pour into tart shell. Bake at 325 degrees until set. Chill before cutting.
