Tomato, Pistachio, and Olive Pesto  

Ingredients
 
5 plum tomatoes, peeled, seeded and roughly chopped
10 pitted Kalamata olives
1/2 cup packed fresh basil leaves
3 cloves garlic
1/2 cup toasted pistachios
1/2 tsp salt
1/4 cup olive oil
3/4 cup grated parmesan cheese
 

Directions
 
Process everything, but the cheese, in the food processor. When its done, stir in the cheese.
