Ingredients
|
4 cups of thinly sliced leeks, white part only, washed in 2 to 3 changes of
water
5 cups of cubed white bread
1 cup of grated sharp cheddar cheese
1 1/2 cup of heavy cream
1/2 pound of goat cheese crumbled
nutmeg
salt and pepper
grated parmesan cheese

Directions

Preheat oven to 350 degrees.
Blanch leeks in boiling salted water, drain, and let cool.
In a large bowl, mix eggs, milk, and cream. Add the leeks, bread and cheddar
cheese. Sprinkle with nutmeg, salt, and pepper. Mix well, then let the mixture
sit for 20 minutes.
Grease a small casserole. Put half of the mixture in and sprinkle with goat
cheese. Top with the rest of the mixture and sprinkle with parmesan cheese.
Place the casserole into a larger pan then fill the larger pan with 1 inch of
water.
Bake in the preheated oven for 45 minutes to 1 hour until a skewer inserted
into the center comes out clean.
Serve as a starch with poultry or read meat.
