Ingredients
|
1 small onion diced
1 tbls peanut oil
1 1/2 tsp curry powder ( either a homemade blend or top quality imported brand
)
1 lb fresh crabmeat
1 cup fresh bread crumbs
1/2 cup mayonnaise ( homemade, or very good commercial brand )
salt and pepper
1 egg, beaten
additional crumbs for coating
additional oil for frying

Directions

Sauté the onion in the oil, add the curry powder and sauté for
two to three minutes. Set aside to cool.
Mix the crabmeat, 1 cup of bread crumbs, mayonnaise and the curry onion mix
together. Season the mix to taste with salt and pepper.
Form the mixture into 6 to 8 cakes, then coat each with bread crumbs.
Heat 1/8 inch of oil in a heavy duty pan over medium heat. Pan fry the cakes
on both sides until nicely browned on both sides and hot through ( 140 degrees
on an instant reading meat thermometer ).
