Sweet Corn Muffins  

Ingredients
 
1 1/8 c cornmeal 2 c flour 1/3 c sugar 1 1/2 Tbsp baking powder 3/4 tsp salt 1 1/2 c milk 3/4 c vegetable oil 3 Tbsp butter or margarine, melted & cooled 3 eggs, slightly beaten 3 Tbsp honey 1/2 tsp vanilla  

Directions
 
Mix together dry ingredients in large bowl and set aside. Stir together all wet ingredients. When ready to bake, pour the milk mixture into the dry ingredients and mix until just moistened. Fill greased muffin tins 2/3 full. Bake at 375 degrees for 20 minutes, or until a toothpick inserted in the center comes out clean.
