Ingredients
- 5 plum tomatoes, peeled, seeded and roughly chopped
- 10 pitted Kalamata olives
- 1/2 cup packed fresh basil leaves
- 3 cloves garlic
- 1/2 cup toasted pistachios
- 1/2 tsp salt
- 1/4 cup olive oil
- 3/4 cup grated parmesan cheese
Preparation
Process everything, but the cheese, in the food processor. When its done, stir in the cheese.
