Ingredients
- 2-3 lbs new potatoes
- 1/2 cups sun dried tomatoes, chopped
- 3/4 cups green onions, chopped
- 1 tsp. minced garlic
- 1/8 cups vegetable oil, or, if the tomatoes are marinated in oil,
- use 1/8 c of the marinade
- salt and pepper to taste
- optional:
- 1/4 c cheddar or pepper jack cheese, shredded
- sour cream
Preparation
Steam or microwave potatoes until tender, but still holding their shape.
While potatoes are steaming, saute sun dried tomatoes, green onions and garlic in the oil until onions are tender. When potatoes are ready, dice and add to pan. Saute until potatoes are evenly coated and beginning to brown. Season with salt and pepper and any other spices you desire. Serve immediately. If using cheese and sour cream transfer to a lightly greased baking dish. Sprinkle with cheese and broil until lightly browned and bubbly. Garnish with sour cream.
