Ingredients
- 1/4 c. plus 4 tbs. butter, softened
- 1/2 c. sugar
- 1 egg yolk
- Grated zest of one lemon
- 1-1/2 c. flour
- 1/4 tsp. salt
- Raspberry jam
Preparation
Beat butter and sugar together until light and fluffy. Add egg yolk and lemon zest. Mix well. Add flour and salt and mix well. Refrigerate dough for 2 - 3 hours. Roll pieces of dough into balls and make an indentation in the center of each ball with thumb. Fill with about 1/4 tsp. jam. Bake at 350 degrees for 10 - 12 minutes.
