Sweet Corn Muffins

Ingredients
- 1 1/8 cup cornmeal
- 2 cup flour
- 1/3 cup sugar
- 1 1/2 Tbs. baking powder
- 3/4 tsp. salt
- 1 1/2 cup milk
- 3/4 cup vegetable oil
- 3 Tbs. butter or margarine, melted & cooled
- 3 eggs, slightly beaten
- 3 Tbs. honey
- 1/2 tsp. vanilla
Preparation
Preheat oven to 375 degrees.
Mix together dry ingredients in large bowl and set aside. Stir together all wet ingredients. When ready to bake, pour the milk mixture into the dry ingredients and mix until just moistened.
Fill greased muffin tins 2/3 full. Bake for 20 minutes, or until a toothpick inserted in the center comes out clean.
Serve warm out of the oven.
