Spa Style Apple Salsa

Ingredients
- 3 medium Granny Smith apples
- 1 small to medium red onion
- 1 medium red bell pepper
- 1 Jalapeno pepper, minced
- 1/3 cup dried currants
- 2 tablespoons fresh cilantro, finely chopped
- 2 teaspoons grated orange zest
- ¾ cup fresh orange juice
- 2 tablespoons Dijon mustard
- 1 tablespoon ground cumin
- ½ cup vegetable oil
- 1 tablespoon dark sesame oil
Preparation
Dice apples, onion, bell pepper into ¼" pieces and combine with currants, minced Jalapeno, chopped cilantro and grated orange zest.
Dressing:
In blender combine orange juice, Dijon mustard and cumin. Process until smooth and gradually add oils in a thin stream until thickened. Toss with apple mixture and refrigerate at least 2-4 hours in order that flavors blend. Serve with tortilla chips.
