Shrimp & Tasso Gravy

Ingredients
- 5 Tbs. unsalted butter
- 1/2 cup thinly sliced tasso ham
- 1/2 cup flour
- 2 Tbs. chopped parsley
- 4 cup chicken broth
- 2 lbs. peeled, de-veined Shrimp
- 1/4 cup white wine
- salt and pepper to taste
Preparation
Melt 4 tablespoons of the butter over low heat. Sauté the tasso ham until slightly browned. Dust with flour and make a roux. Sauté for 5 minutes.
Then add chicken stock, 2 cups at a time, stirring until well blended. Simmer for 15 minute. Meanwhile, sauté the shrimp over high heat in remaining 1 tablespoon butter until almost pink.
Add white wine and sauté one minute more. Remove from heat and set aside. Add shrimp to tasso gravy just before serving.
Finish with parsley, salt & white pepper to taste. Serve over grilled or fried grits cakes.
