Rustic “Minimalist” Bread

Ingredients
- 3C Flour
- 1t Salt
- 1/8 t Yeast
- 1 5/8 C water
Preparation
1.Mix all ingredients in a bowl, cover and allow to ferment for 8-24 hours.
2.Preheat heavy covered baking vessel such as cast iron enameled casserole at 450 for 20 minutes
3.Turn dough onto a generously floured work surface, pull sides up and invert. You should have a semi-shaped round loaf with a gluten cloak.
4.Drop into pre-heated vessel, cover and bake for 30 minutes. Remove cover and bake an additional 30 minutes.
