Ray's Strawberry Soup
Light and refreshing on warm days. The strawberry soup presents elegantly when served in a martini glass.

Ingredients
- 1 quart strawberries, hulled and halved
- 4 cups low-fat buttermilk, divided use
- 3/4 cup sugar
- 2/3 cup sour cream
- 3 Tablespoons peach schnapps
- 1 mint sprig plus mint sprigs for garnish
Preparation
Process strawberries, 1 cup buttermilk, sugar, and one mint sprig in food processor. Set aside. Combine remaining 3 cups buttermilk, sour cream, and peach schnapps in a large bowl. Pour the strawberry mixture int he the sour cream mixture. Whisk well to combine. Cover and chill.
Serve chilled, and garnish with mint sprig or 1/2 strawberry (not hulled).
