Rack of Lamb
Rack of Lamb -- a sumptuous entree guaranteed to be a crowd pleaser!

Ingredients
- 3/4 cup fine breadcrumbs
- 1/2 cup pistachio nuts
- 2 Tbs. chopped fresh oregano
- 2 Tbs. chopped fresh rosemary
- 4 lamb racks French cut and trimmed of fat
- 1/4 cup dijon mustard
- Coarse Salt and white pepper
- 3 Tbs. Olive Oil
Preparation
Process first four ingredients in food processor until finely ground. Transfer mixture to a shallow dish.
Brush lamb with mustard and sprinkle with salt and pepper. Dip lamb racks in crumb mixture to coat. Cover and chill two hours.
Preheat oven to 350 degrees.
Heat oil in heavy skillet to shimmer stage. Sear lamb in oil over medium high heat for two minutes per side. Transfer to baking pan and bake in oven for 25-35 minutes (25 minutes will yield rare racks.) Slice racks between the bones to serve.
