Pumpkin Squares
Great breakfast baked item or perfect for afternoon tea.

Ingredients
- 4 eggs
- 1 2/3 cup sugar
- 1 cup cooking oil
- 1 15 oz can pumpkin
- 2 cups flour, sifted
- 1 Tbs. soda
- 1 Tbs. baking powder
- little salt
- 2 tsp. cinnamon
- ½ to 1 tsp. nutmeg
Preparation
In mixer bowl beat together eggs, sugar, oil and pumpkin till light and fluffy. Stir together dry ingredients. And add to pumpkin mixture. Mix well. Spread onto greased baking pan, 15x10x1. Bake at 350 degrees for 20 to 25 mins. (depending on oven – sometimes I bake for about 10 more minutes…but watch). Cool.
Cream Cheese Frosting
1 3oz pkg. cream cheese
1/2 cup butter or oleo
1 tsp. vanilla
2 cup sifted 10x sugar
Mix and spread on cool cake.
