Pumpkin Pancakes

Delicious pancakes served anytime of the year. A recipe I found in a Midwest Living Magazine. You can substitute plain yogurt in place of sour cream as in the original recipe. I love the richness of sour cream.

  • 1 c. flour
  • 2 T. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 2 eggs
  • 3/4 c. buttermilk
  • 1/2 c. sour cream
  • 1/2 c. canned pumpkin
  • 2 T melted butter
  • 1/2 tsp. vanilla

Preparation
Preparation
In a medium to large bowl, combine the first 6 ingredients and set aside.
In another bowl, combine the remaining ingredients.
Stir just until moistened.
Heat your lightly greased griddle and pour about 1/4 c. of batter.
Cook until lightly browned on both sides.

Serve with real maple syrup.
