  • 2/3 C. shortening
  • 2 1/2 C. sugar
  • 4 eggs
  • 2 C. cooked pumpkin or 1 can 15 oz. pumpkin
  • ¼ C. orange juice
  • 3 C. flour
  • 1 tsp. baking powder
  • 2 tsp. baking soda
  • ½ tsp. salt
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • 2/3 C. raisins

Preparation
Grease and flour 2 loaf pans. Cream together shortening and sugar with electric mixer. Beat in eggs. Add pumpkin and orange juice. Sift together flour, baking powder, baking soda, salt, cinnamon and nutmeg. Add dry mixture to wet mixture and whip in electric mixer until real fluffy. Fold in raisins. Bake 1 hour at 350. Test with cake tester in center. Should be clean. If not, bake 10 minutes more & retest. Freezes well - can microwave to reheat & serve.
